The Food Safety and Standards Authority of India (FSSAI) has issued a warning against the use of liquid nitrogen in food and drinks at the point of sale. This includes cautioning restaurants, bars, and other food-serving establishments, as well as caterers at events such as fairs and weddings. The FSSAI has noticed that liquid nitrogen is being used to make food items like ice creams, cocktails, meetha paan, biscuits, desserts, etc. look more appealing or to create a visual spectacle at the time of serving. However, the unauthorised use of liquid nitrogen in this manner has resulted in serious health issues and injuries.
The FSSAI emphasised that using liquid nitrogen directly at the point of serving or plating without proper authorisation is not allowed. This practice is considered non-compliant with food safety regulations. Additionally, the FSSAI clarified that adding liquid nitrogen at the point of sale, just before consumption, is not permitted under the Food Safety and Standards regulations. The advisory states that liquid nitrogen is intended for technological use during food processing and should not be added at the point of sale.
