With an aim of spreading knowledge about fine chocolates, formalizing the chocolate tasting education in India and establishing India in the global fine flavour map, Cocoatrait, an initiative by L Nitin Chordia, India’s first certified Chocolate taster, has collaborated with the International Institute of Chocolate and Cacao Tasting, London (IICCT) to introduce Level 1&2 of the chocolate taster’s certification in India. The programme will be rolled out in India starting from April, 2018.

 

Students who take the Level 1 Certificate in Chocolate Tasting Course will learn how to taste original chocolate bars and will develop an understanding of how cacao is grown and processed, how chocolate is made and how to identify positive and negative notes in fine cacao and chocolate. 

 

IICCT currently offers the certification in 7 countries across the globe including United Kingdom, USA, Italy, Netherlands, Denmark, Hong Kong and Taiwan.

 

 

Chordia has a chocolate institute called Cocoashala in Chennai which is India’s premier institute for learning Bean to bar chocolate making.
