The Department of Food Science and Technology at Punjab Agricultural University (PAU) recently conducted a five-day training course on Processing and Preservation of fruits and vegetables.

 

As many as 41 participants attended the course organised by the Directorate of Extension Education, PAU. Dr Poonam A Sachdev, Head, Department of Food Science and Technology and course coordinator, acquainted the trainees with food industry business incubation and departmental facilities.

 

The trainees were enlightened on various technologies used for processing and preservation of fruits and vegetables. Demonstrations were given on the preparation of sugar-based products, including mango preserve, jam, mango leather, tomato products, juices, different kinds of pickles and chutneys.

 

The trainees were also informed about various technologies used for potato processing and preparation of value added products, including potato chips, frozen french fries, dehydrated potato slices and indigenous potato products such as aaloo bhujia and chakli.
