For Elif Cakir, Unilever’s Ice Cream Supply Chain Long-Term Planning Lead, the weather is far more than a casual topic—it’s a critical driver of business strategy.

With a supply chain spanning 60 countries and 35 factory production lines, Unilever faces the challenge of meeting consumer demand for ice cream, which fluctuates significantly with weather conditions. In European markets, for instance, a mere 1°C rise in temperature during a summer month like June can dramatically alter sales forecasts.

To navigate these complexities, Unilever has harnessed the power of artificial intelligence (AI) and advanced supply chain systems, enabling greater agility and precision in response to unpredictable weather patterns.

“Our role is to ensure the ice cream supply chain—from factory production lines to the estimated 3 million freezer cabinets worldwide—is prepared to adapt to rapidly changing weather conditions,” says Cakir.

Using AI and digital tools, Unilever’s teams analyse a range of data, including weather inputs, to generate more accurate sales forecasts. This approach has already delivered impressive results, with forecast accuracy improving by 10 per cent in Sweden.

Better sales predictions allow Unilever to optimise production lines and reduce costs, ensuring that ice cream products are available where and when they are needed most.

“AI enables us to predict where and how much ice cream we’ll sell, identify the right freezer cabinets for placement, and efficiently manage order deliveries,” explains Cakir. “By refining our forecasting processes, we’ve enhanced our service levels and optimised costs, resulting in world-class performance. We’re now in the top tier of most markets.”
